Creamy Roasted Tomato and Cheese Pasta

HELLO and happy halloween ❤

*This blog post has absolutely nothing to do with Halloween (sorry!) but I’ve been meaning to post this recipe for a while and today I had some free time so thought “What the heck’!*

A few weeks ago I went around to see a friend and she cooked me the most delicious (and super easy) pasta dish that I tried to replicate when I was in Spain, recently. Her’s was a lot more photogenic looking then mine but I’m still super happy with how my attempt turned out! I made a fresh tomato and garlic and herb cream cheese pasta (baked in the oven) and, oh my, it was tasty…

I went to the local supermarket and purchased fresh cherry tomatoes, basil and a tub of garlic and herb cream cheese along with a bag of penne pasta. One of the things I love about Spain is that the fresh food is always SO much nicer than in the UK. So shopping there is always really fun 🙂



After collecting all the ingredients I needed, I pre-heated the oven to 200 degrees and popped my cherry tomatoes in a baking dish with the whole tub of cream cheese in the centre and drizzled the tomatoes with olive oil.



Once that had baked in the oven for around 20-25 mins, a brought the baking dish out of the oven and used a spatula (or fork) to squish down any tomatoes that had not fully popped. I then put some basil leaves on top before placing the dish back in the oven for another 10 minuets.



Once that had all finished cooking in the oven, I started to boil some pasta ready for it to be incorporated into the tomato and cheese sauce.


*Another alternative way of cooking the pasta is using a tin of chopped tomatoes instead of fresh cherry tomatoes and letting the pasta cook in the oven with the tomato juice.*



And this was the end result! I also added salt and pepper when I incorporated the pasta into the sauce to help bring out the flavour. Even my boyfriend who isn’t a massive fan of cream cheese pasta dishes really enjoyed this meal!! I ended up making wayyy too much pasta for the two of us but we still managed to finish it off 😉

It’s super simple to make, minimal effort, tastes great and it doesn’t cost a lot to buy the ingredients. I really recommend making this on a lazy weekend when you feel like a comforting meal but don’t want to spend hours in the kitchen.

Pasta of your choice

A tub of cherry tomatoes or a tin of chopped tomatoes

Fresh basil

Salt and cracked pepper

Olive oil

A tub of garlic cream cheese

Quirky Chocolate Buttons

Good afternoon to every one of you ❤

I wanted to show you these gorgeous dark chocolate buttons with mixed fruit and almonds! I came home from work today and my mother was making these in the kitchen 🙂

So quirky

They honestly look to die for and I can’t wait to try them!

They are made with dark chocolate and oil and are completely vegan friendly ~

And the best part? No baking required! Just pop them in the fridge and let them go hard and enjoy ❤

You could make this but with various other toppings as well, i’m thinking…chopped walnuts and dates?

What do you guys think? I think they are SO cute and quirky 🙂

I’m not sure what their proper name is in the recipe book but a friend messaged me and said ‘are these just fancy chocolate buttons?’ and I thought ‘…I guess they kinda are!’ I’m therefore Christening them with this name hahaha

Bosh – Vegan Lemon Fizzle Cupcakes

Good morning guys, I hope you are having the most wonderful day/ week/ month 🙂

Over the weekend my boyfriend and I ended up making the most (and I mean MOST) delicious lemon fizzle cupcakes 🧁! Oh…and did I mention they were *vegan*?

“Zesty, Fizzy, Amazing” is bang on the mark

My boyfriend bought a BOSH cupcake mix for me to try as he knows I love plant based food <3. As it was a ready mix it was super easy to do and took barely any time at all…

All we had to do was place the cake mixture in a mixing bowl and then add 110mil of water, grate lemon zest into the mix, and add a bit of oil.

Once this was done, we mixed until smooth and then placed the mix into cupcake holders on a baking tray! We let them bake for 25 mins and then added a lemon drizzle while they were still cool.

Once cool we added more drizzle and popping candy (all included in the box)!

The drizzle required only some lemon juice added to the pre-made icing and it was good to go 🙂

The drizzle ran a little but never mind haha

The popping candy was truly a beautiful finish for the cakes – it just gave them a little something extra and literally made them POP haha.

AND if anyone is curious… we ate all six cakes in the same night…


If you fancy giving these wonderful cakes a try, all you will need is:

– One lemon

– Vegetable based oil

– 110 mil water

– BOSH lemon fizzle cupcake mix

Pumpkin Carving

Hello! I hope you’re having a great week and are excited about the current Halloween season (I certainly am like always!).

There is something really epic about Halloween for me as every year I get crazy excited to celebrate it…

Admittedly, I don’t look like someone that enjoys gothic horror…but I promise you I do haha

I think it’s because I’m in love with anything and everything gothic, eerie, dark and spooky. Movies like ‘Van Helsing (2004)’ and ‘Sleepy Hollow’ are some of my favourite films to watch and this time of year I have an excuse to watch them!!

I decided to calve some pumpkins this year (the small one turned out cuter than the other haha).

It’s super messy and time consuming but honestly a huge laugh and a lot of fun!

I’ve noticed a lot of people in the UK doing it this year which I’m happy about as the UK isn’t that big on Halloween usually!

My boyfriend came round a few days ago and we also baked some Halloween pumpkin biscuits together which was a lot of fun ~ he also wants to calve a pumpkin so I’ve bought two more for us to do together in the week (including a stencil kit this time as that orange pumpkin turned out to be a massive failure)…

My bf wasn’t happy I put sprinkles on ‘his’ biscuit …
