Creamy Roasted Tomato and Cheese Pasta

*This blog post has absolutely nothing to do with Halloween (sorry!) but I’ve been meaning to post this recipe for a while and today I had some free time so thought “What the heck’!*

A few weeks ago I went around to see a friend and she cooked me the most delicious (and super easy) pasta dish that I tried to replicate when I was in Spain, recently. Her’s was a lot more photogenic looking then mine but I’m still super happy with how my attempt turned out! I made a fresh tomato and garlic and herb cream cheese pasta (baked in the oven) and, oh my, it was tasty…

I went to the local supermarket and purchased fresh cherry tomatoes, basil and a tub of garlic and herb cream cheese along with a bag of penne pasta. One of the things I love about Spain is that the fresh food is always SO much nicer than in the UK. So shopping there is always really fun 🙂



After collecting all the ingredients I needed, I pre-heated the oven to 200 degrees and popped my cherry tomatoes in a baking dish with the whole tub of cream cheese in the centre and drizzled the tomatoes with olive oil.



Once that had baked in the oven for around 20-25 mins, a brought the baking dish out of the oven and used a spatula (or fork) to squish down any tomatoes that had not fully popped. I then put some basil leaves on top before placing the dish back in the oven for another 10 minuets.



Once that had all finished cooking in the oven, I started to boil some pasta ready for it to be incorporated into the tomato and cheese sauce.


*Another alternative way of cooking the pasta is using a tin of chopped tomatoes instead of fresh cherry tomatoes and letting the pasta cook in the oven with the tomato juice.*



And this was the end result! I also added salt and pepper when I incorporated the pasta into the sauce to help bring out the flavour. Even my boyfriend who isn’t a massive fan of cream cheese pasta dishes really enjoyed this meal!! I ended up making wayyy too much pasta for the two of us but we still managed to finish it off 😉

It’s super simple to make, minimal effort, tastes great and it doesn’t cost a lot to buy the ingredients. I really recommend making this on a lazy weekend when you feel like a comforting meal but don’t want to spend hours in the kitchen.

Pasta of your choice

A tub of cherry tomatoes or a tin of chopped tomatoes

Fresh basil

Salt and cracked pepper

Olive oil

A tub of garlic cream cheese

Perfect Eggs for Breakfast

I wanted to share with you the best poached eggs on toast I think I have ever done! I mean…look at them 😍!!

I made these beauties for a friend the other morning and oh my God they turned out great!? I served them with smashed avocado (with lemon juice, salt and pepper) on fresh olive bread toast with a little vegan butter ~ so GOOD! It’s so basic but something I love to eat and it’s and absolute go-to for me at the moment! 🙂

Homemade Roasted Vegetable Soup

Hello everybody~

Today I made a delicious roasted vegetable soup made with carrots, peppers, garlic and butternut squash! So YUM!

It turned out very successful so I’m going to share with you what I did:

Firstly I roasted my vegetables in the oven with two pieces of garlic leaving the butternut squash in for around 50 minutes, the carrots 40 minutes, and the peppers for 30 minutes. I then left them to cook for 10 more minutes.

Skins peel off so easily when vegetables have been roasted!

Once cool, I peeled off the skin from the peppers and butternut squash and proceeded to chop everything up into small pieces ready to be boiled.

I then boiled a large pot of water and added in all of my chopped veggies~ I also added in two stock, the roasted garlic and cracked black pepper.

I left it to cook on a low- medium heat with the lid slightly covering the pot for around 20 mins.

After 20 minutes or so the veggies became very soft and the water was tasting like the roasted veg!

I proceeded to then blend the veggies into the water with a hand blender until everything was smooth and thicker ~

This was the result!!!

Success ~ It tasted amazing 😀

To serve, I spooned in some creme fraiche and added some salt and pepper on top. I then warmed some cheese scones up and had them with butter!

If you have any spare time and feel like a hearty homemade meal, I really recommend this soup. It’s easy to make and ridiculous tasty ❤

Visiting Friends and Making Pizza

A few weeks ago I finally got to see my two friends after not having seen them for many weeks during a lockdown here in the UK.

We met up in the evening and had a chilled night-in making the most DIVINE homemade pizza in the pizza oven my friend owns.

I made mine veggie with lots of olives, goats cheese, and spinach ~

They were super easy to make and only took around 30 seconds to cook in the pizza oven!

The hardest part was lifting the dough off the counter and on to the shovel, which was more challenging than I had admittedly anticipated…

We spent the rest of the night catching up and giving lots of cuddles to Pippa the Labrador 🙂
